BOCES culinary team takes first place

GOSHEN — Students in the Orange-Ulster BOCES Career and Technical Education Center's (CTEC) Culinary Careers Academy placed first in the seventh annual New York State ProStart Competition held recently at the Culinary Institute of America in Hyde Park.

The Orange-Ulster BOCES CTEC culinary management team placed first out of seven teams in the culinary tournament. The team will now represent New York state in the National ProStart Management Competition in Kansas City April 29-May 1.

The management team placed first with its creation of a marketing plan for a fictional restaurant named Mizuna (mizuna is an Asian salad green) with the motto "A little something for everyone."

The students created a visual display, gave presentations to the judges and submitted binders that detailed their concept, mission and marketing plans for launching the restaurant.

Members of the winning team are Meghan Wachsman of Warwick, Kristy Gaffney of Marlboro, Jessica Polchinski and Michael McCarey of Middletown and Joseph Gizzi of Pine Bush.

All the students are seniors and all plan on continuing their education in the culinary field. Michael, Jessica and Joseph are all going on to the Culinary Institute of America, while Meghan will attend the New England Culinary Institute and Kristy will attend Paul Smith's College.

Prior to trying out for the management team, the five students didn't know one another at all. Now they are a tight-knit group of friends.

Their instructors and team coaches are Karla Link-Fulton and Scott Zintel.

The National ProStart Invitational is composed of two distinct competitions, the culinary and management competitions. Teams participating in the culinary competition must demonstrate their creative abilities through the preparation of a three-course meal in only 60 minutes. Teams participating in the management competition demonstrate their knowledge of the restaurant and food service industry by developing a restaurant proposal, delivering a verbal presentation, and applying critical thinking skills to challenges managers face in day-to-day operations.

The Orange-Ulster BOCES CTEC Culinary Careers Academy also participated in the timed food preparation competition, but did not place. The students who competed were Andrew Howell of Goshen, Sarah Lieberman and Anthony Milidantri of Monroe-Woodbury, and Antonio D'Onoforio of Minisink Valley. Tom Genovese and Andre Woroschinski were the instructors and coaches.

ProStart is a program developed by the National Restaurant Association Educational Foundation that supports student training through rigorous standards and internships in the food service profession.
